Some love Shrimp while others do not. I am in the first category; I love shrimp! Thinking about what to make for this episode of the Wine and Dine show, I wanted to use only the ingredients I had on hand now. I thought, I have shrimp in the freezer & I have eggs & spices – what about deviled eggs with shrimp? Now I swear I have never heard of this combination before, but apparently others have made it. I looked it up online and there are already many recipes for this combo!
Some of the recipes called for a spice I do not currently have, Old Bay. I knew my mother had that in her cabinet, however, so I had her send me a picture of the ingredients & I made it up with the spices I had!
Ingredients
- Eggs (however many you like)
- Shrimp (I had the already cooked variety)
- Mayonnaise
- Mustard (the kind you like)
- Old Bay spice or similar spices
- Salt and Pepper
- Paprika (I have the smoked variety)
- Butter
Sorry, no measurements. You will adjust to your taste.
Instructions
Boil the eggs. There are many ways advised to complete this task, but I use this method: cover the eggs with water in a pan. Bring the water to a boil, and once boiling, set a timer for 10 minutes. Remove the pan from the stove after 10 minutes, pour out most of the water & add ice. Wait at least 5 minutes. Then crack open & peel the eggs & set on a paper towel.
Cut the eggs open lengthwise. Put the yolks in a bowl; I flake them with a fork. Add mustard, a smaller amount than the mayonnaise, until creamy. *Optional* Add a bit of dill pickle juice. Add the mixture back in to the hollows of the egg whites. Apply salt, pepper, and paprika; set on a display plate.
Shrimp time
In a pan, add butter and Old Bay or your spices of choice. Now, I have a gas stove and never seem to get the flame right, so I suggest medium heat. Add the shrimp, turning over after seeing pink on the bottom side if raw. If heating from cooked, don’t let the shrimp curl too much before turning over. In my experience with cooked shrimp from frozen, I am just heating through.
Place shrimp on the finished deviled eggs and enjoy!
